In the farms of Tolosa you will find Latxa sheep and male and female shepherds who make artisan cheeses from their milk.

As these are cheeses with the Idiazabal designation of origin, to produce them it is necessary to follow the curing process required by the designation.

This is a cheese with a notable aroma and special flavour, balanced and intense.

In Tolosa and the surrounding area, there are two farms that produce cheese with the Idiazabal designation of origin:
